Grill. It is in a strip mall on Durango, south of Sahara Ave, and it doesn't look
like much. But is it very clean. And the staff is friendly and knowledgeable. The
food here is incredibly fresh and costs very little. Undoubtedly, Hummus's best dish
is beef shawarma, since it's made with fresh filet mignon. But don't discount their
crispy, thin-skinned rotisserie chicken that's getting a lot of publicity. $10
bought me an entrée plate of chicken kabob, grilled vegetables, rice pilaf
and salad. You will be quite full after eating this. Spices are used carefully and
bring out the taste of the ingredients, which are first class. The rice pilaf is tasty
and complements the fresh grilled vegetables. My only complaint is the plates are
kind of small, some of the contents spill over onto the table. 
The

vegetables and peppers are grilled to perfection. The chicken shish kabob plate has
huge chunks of fresh, tasty chicken spiced with over 16 spices and herbs. One

The Lebanese-Armenian owner uses filet mignon, that's right, filet mignon for the
beef, and it only costs $9.25. I asked Raffi, the owner, who is there doing the cooking,
marinating and spreading good karma, how he can make money off his beef shawarma?
Raffi replied that he was content to make less profit if his customers will return
to eat again and again. I go as often as I can. The plates of food that come
out are filled with color - grilled peppers, grilled tomatoes, pilaf rice - they look
astonishingly fresh - because they are. Everything is made from scratch. Which is
a far cry from 90% of other restaurants in Las Vegas. This restaurant uses only fresh
ingredients and family recipes. Raffi and his Chef Ben would not tell me about the
spices. It's a big secret. But I overheard them talking about 16 spices used. I will
keep you posted. 
Hummus Grill does not skimp on the meat. Huge lamb chops from New Zealand
in the photo are marinated in secret spices before being grilled and brought sizzling

You see, when
they spice their meats it brings out the flavor, you do not taste the spice. There
is no hot, burning taste in your mouth. There is the flavor of beef or lamb or chicken
that you dream about. It tastes like beef or lamb, then that flavor grows in your
mouth. That's the real idea behind spices, they are amplifiers. They bring out the
best of what you already taste. I dislike over-spiced food or spices for spice sake. Of
course their name would not be Hummus, if hummus wasn't their centerpiece. This garbanzo
bean and sesame seed dip between cooking and soaking takes hours to make. Still this

sure you experience what is the freshest hummus in town. I just learned Hummus Mediterranean
Grill hummus has been picked up by Whole Food, and is being sold there now.

best rotisserie chicken in town, crispy, thin skin, perfectly spiced, make sure you
go to Hummus. I always call ahead just to make sure they haven't run out. A half chicken
is just a little over 6 dollars. A few bucks more get you a whole rotisserie chicken.
Best tasting, best deal in town period. This much chicken should feed you for a couple
of days! As for dessert, I always get the same thing. I personally think Whole
Foods should carry the baklava Hummus makes fresh everyday. Crispy, buttery, nutty,
it's divine. I dream of it. And I always eat too much. Everything is made from scratch
and fresh everyday at Hummus, the best Mediterranean food in Vegas.
